Setting up a speaking activity

One of the things I have to do at my internship is making up speaking activities. They are supposed to be used during class by students to speak in English for at least 15 minutes during each class. But as a first year teacher student, how do you know where to start?

The teacher who is our 'guide' through the world of teaching, helped us a little by supplying a first speaking activity. She told us that we should just use that one as a guideline and then come up with activities that correspond with the material in the books they are working from. Now talk about a challenge. To date we have made about 4 more speaking activities, but now they have upped the game.

They want us to grade our pupils by providing three speaking assignments which they have to record (only audio) and then upload to a cloud. But they want us to make those assignments as well. HELP! 
Luckily we are with 7 English interns, so we can divide the work. My colleague was so nice to start on a first assignment and i and my partner-in-crime co-intern promised to make the second one. I've made a start by finding a topic and then all we have to do is write a dialogue which corresponds with the level of English that the students should have reached over time. All i can hope for: that you wish me luck
